Tuscan Style Corn Sauté

I made a side dish last night that was rather good, IMO, but also super easy and quite simple. Plain corn can be rather boring. Corn needs additions to make a good side dish, and I think this recipe did that. This is for two servings, so adjust as needed.

Ingredients:

• 5 oz. corn kernels

• 2 oz. fresh baby spinach, rinsed and patted dry

• grated Parmesan cheese

• 2-3 gloves of garlic, finely minced

• 1 tsp. olive oil

• salt and pepper to taste

Preparation:

Use a nonstick pan over medium heat, adding the olive oil. Add corn to hot pan and stir occasionally until corn is lightly browned, about 2-3 minutes.

Add garlic and spinach; stir occasionally until spinach is wilted, about 2 minutes.

Remove from burner and stir in salt and pepper. After plating, add the Parmesan cheese.
